You could look at how long it takes for them to actually make a decision to how they actually play in terms of folding, raising and the amount they bet. A player with some experience is likely to bet small amounts which increase progressively as they attempt to scope out the competition before making a final decision either way. A player is probably a rookie if they take an especially long time to make a decision.
